A Little Help from Our Friends: UIC Department of Kinesiology & Nutrition

Beginning in March of 2012, Premier Restaurant Group partnered with the University of Illinois at Chicago's Department of Kinesiology and Nutrition to evaluate and improve the nutritional quality of the company’s menu offerings. Led by clinical professor and dietitian, Jamie Shifley, MS, RD, LDN, a group of UIC Nutrition students assisted Premier through the process of modifying menus to help offer more healthy options for travelers. Using F.I.T. City guidelines, several new menu items were added, and several existing menu items were modified to be more healthful.

The partnership proved a wonderful learning experience for students for Premier's culinary team alike. Ms. Shifley commented, "Premier has been more than receptive to the many nutritional suggestions UIC students and faculty have made. We look forward to continuing to collaborate on this ongoing project. The UIC Department of Kinesiology and Nutrition is honored to help support our city in making healthier choices."
