Timothy J. Rand

President & Chief Executive Officer

As a co-founder of MAC One, Mr. Rand built the company from just three restaurants at Midway Airport to the sixteen that exist today. In his over thirty years in the hospitality industry, Mr. Rand has operated highly successful businesses in retail food and beverage, gaming, and distribution. Mr. Rand feels strongly about giving back to Chicago, his hometown. His enthusiasm for the city has led him, along with his brother Everett Rand, to found the Chicago Football Classic, which, since its inception in 1997, has distributed substantial amounts to historically black colleges and universities and raised awareness of the importance of higher education in Chicago's communities. He sits on the board of directors of the DuSable Museum of African-American History and the Council of Regents of Loyola University Chicago.

Stephen J. Miller, C.M.C.

Vice President & Chief Operating Officer

Leading the company’s strategic development and operation, Mr. Miller’s unique blend of culinary expertise and executive management experience has proven a successful recipe for MAC One. Mr. Miller’s tireless attention to detail and creative vision are evident in all of MAC One’s operations. He began his foodservice career in the British Army Catering Corps at the age of fifteen and was the thirteenth person to receive the distinction of Certified Master Chef (C.M.C.) from the American Culinary Federation. Prior to joining MAC One, Mr. Miller enjoyed successful executive positions in Chicago-based culinary manufacturing and productions companies and owned and operated Let Them Eat Cake, a chain of French inspired Chicago bakeries.

Matthew Thomas Dattilo

General Counsel & Corporate Secretary

As MAC One’s chief legal officer, Mr. Dattilo provides legal and business counsel to the company’s senior executives and assists with the strategic positioning of the company. Prior to joining MAC One’s leadership team, he served in all three levels of government and in the general counsel’s office of a publicly traded health care company. Mr. Dattilo sits on the board of the Loyola University Museum of Art and the associate board of Christ the King Jesuit College Preparatory School. He is admitted to practice law in Illinois, Kentucky, and before the Supreme Court of the United States, and is a member of the Association of Corporate Counsel, the Justinian Society of Lawyers, and the Economic Club of Chicago.

Lawrence S. Acton

Vice President of Development

Mr. Acton serves as director of operations for MAC One. In that role, he is responsible for all aspects of the company’s food and beverage operations including customer service, client relations, general operations, financial performance and strategic planning. Mr. Acton oversees the effective alignment of the services offered to MAC One’s guests through creative solutions targeted to the company’s diverse customer base. Mr. Acton is a veteran food service manager & executive with extensive experience in airport, arenas, stadiums, fine dining, entertainment, special events and convention center venues. Mr. Acton’s interest in the hospitality field began as a teenager. His passion began in university dining and sports venue management. He is a graduate of Michigan State University where he earned a Bachelor of Arts in hotel, restaurant and institutional management (HRIM).

Gloria S. Watkins

Vice Present of Administration

With management experience for restaurant operations at Midway Airport dating to 1981, Ms. Watkins assumed the role of vice-president for airport operations in 1989 overseeing inventory, customer service, and a staff of over 300. Ms. Watkins also managed the company’s operational transition from the old Midway terminal to its present operations in the new terminal between 2001 and 2004. In late 2010, she was named to her current position as the company’s vice-president for administration. Prior to joining MAC One, Ms. Watkins served as a senior officer for two Chicago-based banks.

Laura C. Colletti

General Manager

Ms. Colletti has worked in food and beverage operations at Midway Airport since 1981. In 1989, she joined MAC One as operations manager and ultimately assisted with the transition of MAC One from the old terminal to operations in the new terminal. In 2003, she was named General Manager placing her in charge of the day-to-day operations of more than thirteen restaurants and bars and a staff of over 300 employees. Ms. Colletti is certified in food service, sanitation, and numerous other retail safety related areas.
