Just in time for Earth Day on Monday, Chicago officials are moving to make all restaurants at O'Hare International and Midway airports recycle waste, use eco-friendly materials and include sustainable ingredients in at least 20 percent of their food. Many — such as Nuts on Clark and Fresh Sprigs Salads — have already decided to go green on their own, meeting the Aviation Department's 2-year-old Green Airplane Rating System for Concessions & Tenants voluntarily.

City Colleges of Chicago students have consistently impressed Board Trustee Everett Rand and he has recommended them to local businesses in search of new employees, even his own brother's company. Timothy Rand's firm, MAC One Midway, LLC, a Chicago-based management company which operates the food and beverage program at Midway Airport, has been visiting City Colleges campuses to recruit students to work as distribution clerks, bartenders, servers and other positions in their retail outlets.

Teams from schools in seven countries and the Laureate International Universities Culinary Network joined Kendall College in this two-day competition.
